Ingredients

For 4 servings

  • white fish fillet20 oz
  • white rice2 cup
  • yellow onion3 piece
  • tomato2 piece
  • tahini6 tbsp
  • garlic8 clove
  • lemon2 piece
  • ground cumin5 tsp
  • ground turmeric2 tsp
  • ground cinnamon1 tsp
  • olive oil5 tbsp
  • fresh parsley12 sprig
  • salt2 tsp

Method

  1. Fry the sliced onion in oil until deeply browned and sweet.

  2. Lift out half the onion to use as a topping later.

  3. Add rice, turmeric and cinnamon to the pot with water and salt.

  4. Cover and simmer until the rice is tender, then rest off the heat.

  5. Rub the fish with cumin and salt and fry until it just flakes.

  6. Whisk tahini with lemon, grated garlic and cold water until pourable.

  7. Top the rice with fish, reserved onion, tomato, tahini and parsley.
