- white fish fillet20 oz
- white rice2 cup
- yellow onion3 piece
- tomato2 piece
- tahini6 tbsp
- garlic8 clove
- lemon2 piece
- ground cumin5 tsp
- ground turmeric2 tsp
- ground cinnamon1 tsp
- olive oil5 tbsp
- fresh parsley12 sprig
- salt2 tsp

Method
Fry the sliced onion in oil until deeply browned and sweet.

Lift out half the onion to use as a topping later.
2 min · prep
Add rice, turmeric and cinnamon to the pot with water and salt.

Cover and simmer until the rice is tender, then rest off the heat.
18 min · simmer
Rub the fish with cumin and salt and fry until it just flakes.
7 min · fry
Whisk tahini with lemon, grated garlic and cold water until pourable.

Top the rice with fish, reserved onion, tomato, tahini and parsley.
