  • beef strips20 oz
  • flatbread4 piece
  • tomato2 piece
  • cucumber1 piece
  • red onion piece
  • tahini4 tbsp
  • plain yogurt8 tbsp
  • white vinegar4 tbsp
  • garlic8 clove
  • ground cumin5 tsp
  • paprika4 tsp
  • ground cinnamon1 tsp
  • lemon piece
  • olive oil4 tbsp
  • fresh parsley12 sprig
  • salt2 tsp

Method

  1. Slice onion paper thin and steep it in the vinegar with salt.

  2. Toss beef with cumin, paprika, cinnamon, oil and salt.

  3. Fry in a very hot pan in one layer until the edges crisp.

  4. Whisk tahini, yogurt, grated garlic, lemon and a little water.

  5. Chop tomato and cucumber, toss with parsley.

  6. Warm the flatbread in the beef pan for a few seconds a side.

  7. Fill with beef, salad, soured onion and plenty of tahini sauce.
