- pork tenderloin20 oz
- corn tortillas12 piece
- pineapple8 oz
- red onion1¼ piece
- white cabbage8 oz
- chipotle paste6 tsp
- ground cumin4 tsp
- smoked paprika4 tsp
- dried oregano2 tsp
- garlic8 clove
- lime1¼ piece
- fresh cilantro12 sprig
- olive oil4 tbsp

Method
Blend or mash half the pineapple with chipotle, spices, garlic and oil.

Slice the pork thin and toss it through the marinade.

Dice the remaining pineapple and finely chop the red onion.

Shred the cabbage and dress it with lime and salt.

Sear the pork in one layer in a very hot pan.

Leave it undisturbed until the marinade catches and blackens.

Char the diced pineapple in the same pan for a minute.

Warm the tortillas in a dry pan until soft and blistered.
