Moroccan Chicken Tagine with Apricots

  • chicken thighs24 oz
  • couscous2 cup
  • dried apricots6 tbsp
  • carrot3 piece
  • yellow onion2 piece
  • canned diced tomatoes1 can
  • chicken broth32 tbsp
  • garlic8 clove
  • fresh ginger4 tsp
  • ground cumin4 tsp
  • ground cinnamon2 tsp
  • paprika4 tsp
  • ground turmeric1 tsp
  • olive oil4 tbsp
  • fresh cilantro12 sprig
  • salt2 tsp

Method

  1. Season the chicken and brown it hard in oil, skin-side first.

  2. Lift out. Soften onion, carrot, garlic and ginger in the same fat.

  3. Add cumin, cinnamon, paprika and turmeric and fry until fragrant.

  4. Add tomatoes, broth, apricots and the chicken. Simmer covered.

    25 min · simmer

  5. Uncover and reduce until the sauce turns glossy and clings.

    6 min · simmer

  6. Pour boiling water over the couscous, cover and let it stand.

  7. Fork the couscous through and finish the tagine with cilantro.

Serving suggestion

The apricots should collapse into the sauce — that sweetness is the whole dish.
