- ground beef20 oz
- penne pasta8 oz
- canned diced tomatoes1¼ can
- gouda cheese5 oz
- bell pepper2 piece
- yellow onion¾ piece
- corn1 cup
- garlic4 clove
- chili powder4 tsp
- ground cumin2 tsp
- fresh cilantro8 sprig
- olive oil2 tbsp
- salt1 tsp

Method
Preheat oven to 400 F. Boil pasta 2 minutes short of the package time.
10 min · boil
Brown beef with onion and pepper in oil over high heat, 7 minutes.
8 min · fry
Add garlic, chili powder, and cumin. Fry 1 minute.
2 min · saute
Stir in tomatoes and corn, simmer 5 minutes until thickened.
6 min · simmer
Fold pasta through, top with gouda, bake 15 minutes until bubbling.
16 min · bake
Rest 5 minutes so it sets, then scatter cilantro.
