  • ground lamb20 oz
  • flatbread4 piece
  • tomato2 piece
  • cucumber1 piece
  • red onion piece
  • plain yogurt12 tbsp
  • tahini4 tbsp
  • garlic8 clove
  • ground cumin5 tsp
  • ground coriander3 tsp
  • paprika2 tsp
  • lemon piece
  • fresh parsley12 sprig
  • olive oil2 tbsp
  • salt2 tsp

Method

  1. Mix lamb with half the garlic, cumin, coriander, paprika and salt.

  2. Shape into short fat sausages and press them slightly flat.

  3. Fry in oil over high heat, turning, until charred all over.

  4. Whisk yogurt with tahini, remaining garlic, lemon and salt.

  5. Chop tomato, cucumber and onion, toss with parsley and lemon.

  6. Warm the flatbread briefly in the kofta pan.

  7. Pile kofta onto the bread with salad and tahini yogurt.

Serving suggestion

Loosen the tahini yogurt with cold water until it pours — it thickens as it sits.
