Ingredients

For 4 servings

  • bacon12 oz
  • potatoes42 oz
  • yellow onion piece
  • white cabbage8 oz
  • carrot2 piece
  • apple6 oz
  • whole milk16 tbsp
  • butter6 tbsp
  • fresh chives4 tbsp
  • salt2 tsp
  • black pepper1 tsp

Method

  1. Peel and cube potatoes. Boil in salted water until falling apart, 15 minutes.

  2. Dice bacon. Fry cold-pan over medium until the fat renders and it crisps.

  3. Lift out bacon. Fry sliced onion in the fat until deep gold, 6 minutes.

  4. Shred cabbage, carrot, and apple. Toss with salt for a sharp raw slaw.

  5. Mash potatoes with warm milk and butter. Season aggressively.

  6. Hollow the mash, pile bacon and onion in the crater, top with chives.

Serving suggestion

Serve the raw slaw right alongside — it is the only thing cutting all that fat.
