Ingredients

- bacon12 oz
- potatoes42 oz
- yellow onion1½ piece
- white cabbage8 oz
- carrot2 piece
- apple6 oz
- whole milk16 tbsp
- butter6 tbsp
- fresh chives4 tbsp
- salt2 tsp
- black pepper1 tsp

Method
Peel and cube potatoes. Boil in salted water until falling apart, 15 minutes.
15 min · boil
Dice bacon. Fry cold-pan over medium until the fat renders and it crisps.
8 min · fry
Lift out bacon. Fry sliced onion in the fat until deep gold, 6 minutes.
6 min · saute
Shred cabbage, carrot, and apple. Toss with salt for a sharp raw slaw.
5 min · prep
Mash potatoes with warm milk and butter. Season aggressively.
4 min · prep
Hollow the mash, pile bacon and onion in the crater, top with chives.
2 min · rest
Serving suggestion
Serve the raw slaw right alongside — it is the only thing cutting all that fat.
