Ingredients
For 4 servings
- black beans3 cup
- cheddar cheese6 oz
- flour tortillas8 piece
- bell pepper1½ piece
- yellow onion1 piece
- corn1¼ cup
- garlic4 clove
- ground cumin3 tsp
- smoked paprika2 tsp
- sour cream6 tbsp
- lime1¼ piece
- vegetable oil3 tbsp
- salt1½ tsp

Method
Dice the onion and pepper small and soften them in oil, 6 minutes.
6 min · saute
Add garlic, cumin and paprika and fry for a minute.
1 min · saute
Add the drained beans and corn and crush about half the beans with the back of a spoon — that is what glues the filling.
4 min · simmer
Season with salt and lime and let the mixture cool a minute so it does not steam the tortillas.
2 min · rest
Spread filling over half of each tortilla, top with cheese and fold over.
3 min · prep
Griddle dry, 2 minutes a side, pressing down, until the outside is crisp and the cheese has gone.

Serving suggestion
Cut into wedges with sour cream and lime for dipping.
