Ingredients

For 4 servings

  • ground beef18 oz
  • white rice1 cup
  • canned diced tomatoes½ can
  • english cucumber1 piece
  • yellow onion1 piece
  • plain yogurt12 tbsp
  • garlic8 clove
  • ground cumin3 tsp
  • ground coriander2 tsp
  • ground allspice1 tsp
  • smoked paprika2 tsp
  • olive oil4 tbsp
  • fresh parsley4 sprig
  • fresh mint2 tbsp
  • lemon1 piece
  • salt2 tsp

Method

  1. Mix beef with grated onion, garlic, cumin, coriander, allspice and paprika.

  2. Chill the mixture while you start the rice.

    5 min · rest

  3. Rinse the rice and toast it in oil for 1 minute.

  4. Add the tomatoes, water and salt, then simmer covered.

  5. Grate the cucumber and squeeze it dry.

  6. Mix with yogurt, garlic, mint, lemon juice and a pinch of salt.

  7. Form the beef into 8 oblong kofta around your finger.

  8. Sear the kofta 3 minutes per side until browned.

  9. Fluff the rice, plate the kofta, spoon yogurt alongside, add parsley.

Serving suggestion

A simple salad of cucumber, tomato, and red onion with lemon oil dressing is perfect alongside.
