Thai Basil Chicken

  • chicken thighs20 oz
  • jasmine rice2 cup
  • bell pepper2 piece
  • snap peas2 cup
  • yellow onion piece
  • fresh basil16 sprig
  • fish sauce8 tsp
  • soy sauce4 tbsp
  • brown sugar4 tsp
  • garlic12 clove
  • red pepper flakes1 tsp
  • lime1 piece
  • olive oil4 tbsp
  • salt1 tsp

Method

  1. Cook the jasmine rice according to package directions.

    15 min · boil

  2. Whisk the fish sauce, soy sauce and brown sugar together.

  3. Chop the chicken small and slice the pepper and onion.

  4. Sear the chicken in a very hot pan without stirring, so it browns.

    5 min · fry

  5. Add the onion, pepper and snap peas and toss for two minutes.

  6. Add the garlic and pepper flakes and cook until fragrant.

    1 min · saute

  7. Pour in the sauce and let it reduce onto the chicken.

    2 min · simmer

  8. Kill the heat and stir in all the basil at once.

  9. Squeeze lime over and serve on the rice.
