  • pork tenderloin20 oz
  • jasmine rice2 cup
  • bell pepper3 piece
  • yellow onion2 piece
  • pineapple8 oz
  • cornstarch8 tsp
  • ketchup6 tbsp
  • rice vinegar8 tsp
  • soy sauce4 tbsp
  • brown sugar6 tsp
  • garlic8 clove
  • fresh ginger4 tsp
  • olive oil5 tbsp
  • salt1 tsp

Method

  1. Cook the jasmine rice according to package directions.

    15 min · boil

  2. Cube the pork and toss it with cornstarch and salt until coated.

  3. Whisk ketchup, vinegar, soy, brown sugar and a splash of water.

  4. Fry the pork in oil until crisp and golden on all sides.

  5. Lift the pork out onto a plate.

  6. Fry the pepper and onion hard so they colour but keep some bite.

  7. Add the garlic, ginger and pineapple and cook until fragrant.

  8. Pour in the sauce and simmer until it thickens and shines.

  9. Fold the pork back in at the last second so it stays crisp.

Serving suggestion

The pork goes back in right at the end — left to sit in sauce it turns soggy.
