  • potatoes28 oz
  • cucumber1 piece
  • tomato piece
  • red onion1 piece
  • plain yogurt12 tbsp
  • panko breadcrumbs8 tbsp
  • garlic8 clove
  • dried oregano4 tsp
  • lemon piece
  • fresh dill4 tbsp
  • olive oil4 tbsp
  • salt2 tsp

Method

  1. Preheat oven to 450 F. Cut potatoes into wedges, toss with oil and salt.

  2. Roast wedges 25 minutes, turning once, until crisp.

  3. Grate cucumber and squeeze it properly dry in your hands.

  4. Mix with yogurt, half the garlic, dill, lemon and salt for the tzatziki.

  5. Mix pork with panko, oregano, remaining garlic and salt. Roll small balls.

  6. Fry meatballs in oil 8 minutes, turning, until browned all over.

  7. Chop tomato and onion into a rough salad and serve everything together.
