  • pork tenderloin20 oz
  • white rice2 cup
  • black beans can
  • orange piece
  • tomato piece
  • red onion1 piece
  • lime1 piece
  • garlic8 clove
  • fresh cilantro8 sprig
  • ground cumin3 tsp
  • dried oregano2 tsp
  • olive oil2 tbsp
  • salt1 tsp

Method

  1. Whisk orange juice, lime, grated garlic, cumin, oregano, oil, and salt.

  2. Slice pork into medallions and marinate in half the mojo, 10 minutes.

    10 min · rest

  3. Cook rice according to package directions. Warm beans through.

    15 min · boil

  4. Sear pork in a hot pan 3 minutes per side until caramelized at the edges.

  5. Dice tomato and onion, toss with cilantro and a squeeze of lime.

  6. Build bowls with rice, beans, pork, salsa, and the reserved mojo.
