- pork tenderloin20 oz
- white rice2 cup
- black beans1¼ can
- orange1¼ piece
- tomato1¼ piece
- red onion1 piece
- lime1 piece
- garlic8 clove
- fresh cilantro8 sprig
- ground cumin3 tsp
- dried oregano2 tsp
- olive oil2 tbsp
- salt1 tsp

Method
Whisk orange juice, lime, grated garlic, cumin, oregano, oil, and salt.
5 min · prep
Slice pork into medallions and marinate in half the mojo, 10 minutes.
10 min · rest
Cook rice according to package directions. Warm beans through.
15 min · boil
Sear pork in a hot pan 3 minutes per side until caramelized at the edges.
7 min · fry
Dice tomato and onion, toss with cilantro and a squeeze of lime.
5 min · prep
Build bowls with rice, beans, pork, salsa, and the reserved mojo.

Reserve half the mojo raw — spooning it over at the end is what makes the dish.
