Brazilian Beef with Rice and Beans

  • beef strips22 oz
  • white rice2 cup
  • black beans can
  • tomato2 piece
  • yellow onion2 piece
  • bell pepper2 piece
  • garlic12 clove
  • bay leaf1 piece
  • ground cumin4 tsp
  • smoked paprika2 tsp
  • lime piece
  • fresh cilantro12 sprig
  • olive oil4 tbsp
  • salt2 tsp

Method

  1. Cook the rice according to package directions.

    15 min · boil

  2. Soften half the onion and garlic in oil until sweet.

    5 min · saute

  3. Add the beans with their liquid, bay leaf and cumin.

  4. Simmer until the beans thicken and go glossy.

    15 min · simmer

  5. Sear the beef in a very hot pan in one layer.

    4 min · fry

  6. Add the remaining garlic and the paprika and toss through.

  7. Chop the tomato, pepper and remaining onion into a rough salsa.

  8. Dress the salsa with lime, cilantro and salt.

  9. Plate rice, beans and beef side by side with salsa on top.
