- sourdough bread4 slice
- romaine lettuce8 cup
- cherry tomatoes2 cup
- parmesan cheese8 tbsp
- mayonnaise6 tbsp
- dijon mustard4 tsp
- garlic8 clove
- lemon1¼ piece
- olive oil5 tbsp
- salt1 tsp
- black pepper1 tsp

Method
Tear bread into rough chunks — torn edges crisp better than cut ones.

Fry the bread in oil with a smashed garlic clove until gold, 6 minutes.

Season chicken and fry in the same pan, 6 minutes per side, to 165 F.

Whisk mayonnaise, remaining grated garlic, mustard, lemon and parmesan.

Rest chicken 5 minutes, then slice thick across the grain.

Toss lettuce and tomatoes with the dressing, then fold croutons through.

Lay the warm chicken over and finish with parmesan and pepper.
