Method
Preheat oven to 450 F. Cut the potatoes into half-inch fries.

Toss the fries with oil, salt and pepper in one layer.

Roast, flipping halfway, until crisp.

Stir the mayonnaise, ketchup and mustard into a sauce.

Divide the beef into 8 loose balls. Season with salt and pepper.

Smash each ball flat in a dry, very hot skillet.

Cook 90 seconds without moving them, until deeply crusted.
