Shrimp Scampi Linguine

  • shrimp20 oz
  • linguine12 oz
  • baby spinach4 cup
  • garlic8 clove
  • dry white wine8 tbsp
  • lemon2 piece
  • butter4 tbsp
  • olive oil2 tbsp
  • red pepper flakes½ tsp
  • fresh parsley4 sprig
  • parmesan cheese4 tbsp
  • salt1 tsp

Method

  1. Boil linguine in salted water per package. Reserve half a cup of pasta water. Drain.

  2. Heat oil and half the butter in a skillet over medium-high.

  3. Add shrimp in one layer. Season with salt and pepper flakes. Cook 90 seconds per side until pink.

  4. Add minced garlic, cook 30 seconds. Pour in wine and lemon juice, let reduce 1 minute.

  5. Toss in pasta, spinach, remaining butter, and a splash of pasta water. Swirl to a glossy sauce.

  6. Plate. Finish with parsley, parmesan, and lemon zest.
